Will my site go down during a transfer and will my mail still be reachable?

In principle, a transfer can be done in such a way that you do not notice anything. If you have control over the DNS at your current provider, you could move your site, email and any databases to our servers during the night and then change the IP addresses in the DNS to point to our servers. Only after that would the transfer order be placed. That way, nobody will notice the transfer.

It can also be done the other way round. Immediately after the request, you change all IP addresses in our DNS so that they point to your old provider. Then the domain name is transferred. Once that has happened, you move your site and so on, and change the IP addresses in our DNS. Of course, you also need to create all email addresses you used with your previous provider on our servers.

If your website can be offline for a while without any problem, you can of course simply transfer the domain and upload your website. The transfer will then take care of itself. During a short period, email may then arrive both at your old provider and with us.
